One of the thing that I love the most as a working mom is an easy recipe! I love whole foods but I can’t always find quick recipes for them. I especially love things that I can leave and let go while I go play with my kids. I also love things that don’t require 45 min of prep even if it only takes 15 min to cook. So I thought I’d through in a post here and there for easy recipes. Please feel free to send me your favorite easy, little prep recipes!
First up…raisins! Why make raisins when they’re $1 at the store? If you have had homemade raisins, you know! They are delicious. I had another working mom teach me how to make them and let me sample some of her’s. I don’t even like raisins and these were amazing. I asked for more!! The best part is that this is a perfect recipe to make with your kids and no, you don’t have to have a dehydrator. Both of my kids love, love, love them!
Directions…ready for this, it doesn’t get much easier:
Preheat oven to 175 F.
Buy white or red seedless grapes.
Roll the grapes of the stem. You can either leave the small stems off or quickly pick off.
Optional: Blanch or “check” the grapes by dropping them in boiling water for 30-60 sec until their skins burst. Then run cold water over them to stop the heating process. This helps break their tough skins and allows them to dry faster.
Lay in a cookie sheet–one with holes or small slots is recommended for quicker drying.
Bake for approximately 18-24 hours…until raisins are sufficiently dry without moist centers.
